Cooking Snails in the Shell
Let the snails sit, so they get hungry, by leaving them in the fridge for 2-3 days. Rinse them and then cook in a pot of boiling salted water until they are tender; this could take 20 minutes or 2 hours. Taste one to make sure. Drain them, then pull them out of the shell and pull off the tail. You could cook them in the sauce of your choice at this point, something with garlic, tomatoes, vermouth, etc. Try the canned ones if this sounds like too much work.
There's another kind of snail, bigger than a periwinkle, that you have to pull the membrane off of, then put them in a large pot with lettuce—the snails eat the lettuce and clean themselves out. Then they can be cooked directly in your tomato sauce.
