Turkey, Green Onion and Rice Noodle Soup

6 cups water*
4 1.6 oz packages Thai Kitchen Lemongrass and Chile Soup Mix, or other Asian noodle soup mix of choice
1 pound turkey cutlets, sliced into thin strips
2 tablespoons Maggi Seasoning
1 bunch scallions, sliced thin on bias
1 cup fresh bean sprouts
salt and pepper*
Bring water to a boil in a medium saucepot. Add oil packet and seasoning packet from soup mix to water. Add turkey to broth and turn heat down very low, broth should not even simmer. After 1 minute add rice noodles; allow noodles to soften- about 3 minutes. Bring soup up to a low simmer, add remaining ingredients and stir to combine. Season with salt and pepper if needed.
