Tomato and Mozzarella Salad

3-4 large, ripe red tomatoes,
1 1/2 pounds fresh mozzarella,(buy the kind made with salt) cut into 16 slices
32 large beautiful basil leaves
2 small shallots, chopped
4 tablespoons red wine vinegar
salt and freshly ground black pepper*
extra virgin olive oil *
Slice the tomatoes into 16 even slices and lay them out onto a work surface and season liberally with salt and pepper. Mix chopped shallots with the red wine vinegar. To assemble each salad, lay down one tomato slice at the far left side of a large plate and top it with one basil leaf. Shingle a slice of mozzarella on top of the tomato and top that with a basil leaf as well. Repeat this process three times so that you are left with a line of the tomatoes, basil and mozzarella running from the inner edge of the left side of the plate to the right side. Season the salads with more salt and pepper to your liking. Spoon the shallot mixture evenly over the salads. Drizzle the salads very liberally with the extra virgin olive oil and serve.
