Recipe Name: Tangy Turkey and Snow Pea Stir Fry

2 cups water*
2 1/2 cups instant rice
salt and pepper to taste*
3 tablespoons canola oil*
1 pound turkey cutlets, cut into thin strips
7 oz pack Ready Pac Sliced Peppers and Onions
4 oz snow peas
15 oz jar Patak's Tangy Lemon & Cilantro Cooking Sauce, or other comparable sauce of choice
Bring lightly salted water to a boil in a medium saucepot. Stir in rice, cover, turn off heat and allow rice to absorb liquid for 5 minutes. Meanwhile, heat a 14 inch heavy skillet with canola until very hot; oil should be smoking. Add turkey cutlet strips and stir fry for 1 minute. Next, add peppers and onions to the pan and season; stir fry for another 2 minutes. Add snow peas to the pan and continue to cook until they are tender. Add the sauce to the pan and stir thoroughly to combine. Season with salt and pepper if necessary. Serve turkey mixture over a bed of rice.
