Recipe Name: Savory Seafood Stew

1/4 cup extra virgin olive oil*
1 1/2 cups zucchini, cut into 1/2 moons
1 - 1 1/4 pounds lemon sole, cut into 1 inch chunks
salt and pepper to taste*
2 cups Fresh Start Cubed Golden Potatoes
1 jar Victoria Fra Diavolo Sauce, or other fra diavolo sauce of your choice
1/4 cup fresh savory leaves, roughly chopped
Heat olive oil in a very large sauté pan until hot. Add zucchini and cook for 45 seconds, stirring frequently. Season lemon sole with salt and pepper and add to the pan. Cook for another minute or so and add potatoes, savory and sauce. Cover, bring to a boil and then turn down to a simmer. Simmer for about 2 1/2 minutes or until sole is cooked through and potatoes are hot. Serve hot.
