It might seem like a funny combination, but fruit and fish marry perfectly, like in this dish. Sweet, salty, bitter, and sour, all four flavors are here and it cooks in a flash.
12 2 oz pieces of salmon fillet
salt & pepper*
1 1/3 cups pineapple puree
1 large red onion, finely chopped
2 15 oz cans canned black beans
1/2 cup sherry wine
Season the salmon with salt & pepper. Mix together the onion and pineapple puree into a thick paste. Season the beans with salt and pepper and sherry wine. Spoon beans onto a broiler pan, top with the salmon, and cook under the broiler for 5 minutes.
