Salmon in A Butternut Squash Barbecue Sauce

Recipe Name: Salmon in A Butternut Squash Barbecue Sauce

3 small red onions, cut into rings 1/5 inch thick
4 tablespoons butter, cut into small chunks*
salt and pepper to taste*
2 16 oz packages Imagine Organic Butternut Squash Soup, or other butternut soup of choice
1/3 cup barbeque sauce
1 ½ pounds skinless salmon filet, cut into 12 - 2oz tranches

Preheat broiler. Bring soup and barbecue sauce to boil in a large sauté pan. Lay out onions on a broiler pan and season with salt and pepper. Dot onions with butter and broil until charred and just tender, about 5 minutes. Meanwhile, season salmon well with salt and pepper. Turn the heat down under the soup and gently place salmon in the pan; shake the pan to submerge the fish completely. Cover with lid and cook for about 5 minutes, keeping the soup just under the simmering point. When the salmon is done shut off the heat and pile the onions in the bottom of 4 large bowls. Top each pile with 3 tranches of salmon and ladle soup over the fish. Serve hot.
