Roast Beef, Chestnut and Brussels Sprouts Consomme

1 pound sliced Black Bear Roast Beef (or other roast beef of choice), cut into 1-inch wide strips
1 tablespoon corn oil*
1 small package Brussels sprouts, slice thinly (about 4 cups)
salt and pepper to taste*
7 oz jarred chestnuts, sliced
2 1/4 cups Swanson Beef Broth, or other beef broth of your choice
zest of 3 lemons plus 1 teaspoon lemon juice
Heat corn oil in a large sauté pan, over high heat. Add Brussels sprouts to pan and season with salt and pepper; stir-fry for about 2 minutes. Meanwhile, arrange beef on a plate and microwave until hot - about 2 -3 minutes; be sure to just heat the roast beef -not to cook it any further . Set aside. Add chestnuts to the Brussels sprouts. Add beef broth to the Brussels sprouts and bring to a simmer; add lemon juice and zest. Taste the Brussels sprouts mixture and season if necessary. Divide mixture among 4 bowls and scatter the warm roast beef on top. Serve hot.
