Recipe Name: Rice Noodles with Spicy Peanut Sauce

hot water*
1 pound package wide rice noodles
2/3 cup canola oil*
10 oz Ready Pac Sliced Peppers and Onions
salt*
1 11.5 oz bottle House of Tsang Bangkok Padang Peanut Sauce
1/2 cup chopped fresh cilantro
1/2 cup roasted peanuts
Cover rice noodles with hot water and stir to separate. Allow to absorb the water for 25 minutes and then drain well. Heat two large sauté pans with 1/4 cup oil each. When hot, divide peppers and onions among the two pans and stir fry for about 1 1/2 minutes, season with salt. Add half of the noodles to each pan and stir fry for another 3 minutes or until noodles are cooked through. Transfer noodles to a large bowl and add sauce and cilantro and toss to coat. Season with salt if necessary and sprinkle peanuts on top. Serve hot.
