Recipe Name: Prosciutto, Mozzarella and Tomato Panini

4 7-inch pieces Italian bread, split in half
2 ripe tomatoes, sliced thin
12 oz fresh mozzarella, sliced thin
6 oz thinly sliced prosciutto
½ cup basil leaves, washed
salt and pepper to taste*
¼ cup extra virgin olive oil*
Preheat panini press. In between the top and bottom half of the Italian bread, layer mozzarella, prosciutto, tomatoes and basil. Season well with salt and pepper and drizzle with olive oil. Close sandwich and cook in panini press until cheese is melted, about 5 minutes. Remove from panini press and cut in half. Serve.
