Pear and Stilton Cheese Salad

1 cup pecan halves
2 tablespoons sherry vinegar*
¼ cup extra virgin olive oil*
3 tablespoons freshly chopped chives
2 large heads frisee, trimmed and cut into bite-size pieces
8 oz Stilton cheese, crumbled or cut into small cubes
3 ripe D'anjou pears, sliced thinly
salt and pepper to taste*
Preheat oven to 400 degrees. Lay pecan halves out onto a sheet tray, and toast in the oven for 5 minutes or until their color deepens and are very aromatic. Allow to cool and crush lightly, if desired. Meanwhile, whisk together the vinegar and olive oil in a small bowl. In a large bowl, combine the frisee, chives, pears, cheese and toasted pecans. Toss with the vinaigrette and season with salt and pepper. Serve.
