Peanut Chicken and Radicchio Salad
Estimated cost: $14.25
2.5 pound Perdue store roasted chicken breast, shredded
1 ¼ cups House of Tsang Bangkok Padang Peanut Sauce, or other Thai peanut sauce of choice
3 oranges segmented
1- 3/4 pound head radicchio, sliced crosswise 1/2 inch thick
½ cup roasted salted peanuts
salt and pepper to taste*
In a medium bowl, thoroughly combine chicken and peanut sauce. Gently stir in orange segments and season with salt and pepper. Form a bed or radicchio on the bottom of 4 plates and pile chicken salad on top. Drizzle any remaining dressing over the salads. Sprinkle peanuts over salads and serve.
