Recipe Name: Parmigiano Flounder with White Beans and Olive Tapenade

olive oil*
1 cup grated Parmigiano-Reggiano
1 1/4 pound flounder filets
salt and pepper to taste*
2 1/2 15 oz cans cannelini beans, drained
1 3/4 cups Victoria Marinara Sauce, or marinara of your choice
1 cup Dellalo Olive Bruschetta Topping, or olive condiment of your choice
Preheat broiler. Line a broiler pan with foil and lightly coat the foil with oil. Lay out flounder on foil and season with salt and pepper. Sprinkle flounder with parmigiano, coat thoroughly and generously. Place under broiler and broil for 3-5 minutes depending on how thick flounder is. Parmigiano should bubble and turn golden brown. Meanwhile, in a large sauté pan heat together the remaining ingredients. Season with salt and pepper, if necessary. Divide beans among four large bowls and lay flounder on top of beans. Serve.
