Basic Recipes for Mushrooms

No need to cringe at the sight, smell or sound of the word mushroom. Try saying it now, breath in-breath out and say
M U S H R O O M!
It isn't a poisonous snake. In fact mushrooms are my absolute favorite fall ingredient. Fear not the fungi that is healthy, delicious and absurdly easy to prepare. Never use canned mushrooms. Nah ah. Don't do it. Fresh are best, frozen is a great runner up. Do very little to them, cook them quickly over high heat or steep them like tea. They are your friends you just don't know it yet.

All Purpose Mushroom Mix (APPM)
Rough cut wild or cultivated mushrooms, butter, shallots, garlic, sweet wine. Heat pan, add butter,add mushrooms, sweat 5 mins, add shallots, garlic and then deglaze with sweet white wine and reduce almost dry. This mix is a great base for 100's of mushroom preparations. Here are a ten below:

1. For Mushroom Boullion; add chicken stock to APMM and steep.

2. For Mushroom gravy; add flour and chicken stock to APPM

3. For Quesadillas; add mild cheddar cheese, green chilies, and fill a soft flout tortilla, toast on both side until cheese melts

4. For Curried mushrooms; add curry powder to APPM

5. For Lasagna; add favorite tomato sauce to APPM and layer mix between lasagne noodles with mozzarella and parmigiano cheese

6. For Mushroom Burgers; add ground beef to APPM and grill

7. For Hunter Style Mushroom Stew; add Venison, lamb or chicken, green peepers and oregano to APPM

8. For Mushroom Fondue; add gruyere cheese and white wine, serve with bread and kirschwasser

9. For Mushroom pizza; add robiola cheese and place mix between two thin pizza crusts, dock with a fork and cook on a pizza stone

10. Mama's Jambotta; Add yellow squash, zuchini, potatoes, peppers, onions, tomatoes, crushed red pepper to APPM
