Martini Extra Dry Mussels with Chorizo and Saffron

Recipe Name: Martini Extra Dry Mussels with Chorizo and Saffron

This spanish style Mussels is a great starter for your guests or family at dinner but can stand on it's own as a main course! You will love the extra dry Martini flavor with the mussels!


3 tablespoons extra-virgin olive oil*
½ pound Spanish-style chorizo, sliced
½ cup Martini Extra Dry
1 large pinch saffron
1 ¾ cups bottled clam juice
2 pounds mussels, scrubbed and de-bearded

In a very large rondeau, heat olive oil over medium heat. Add chorizo and sauté for 1 minute. Next, add Martini Extra Dry and saffron, turn heat up to high and reduce by half. Add clam juice and bring to a rolling boil. Add mussels to the pot and cover with a lid. Cook just until mussels open, about 1 ½ minutes. Spoon mussels and broth into bowls and serve immediately.
