Martini Bianco Marinated Salmon with a Lemon and Basil Fresh Breadcrumb Crust
This Salmon dish was inspired by the light Bianco made by Martini. This dish is fresh and tasty and since it is baked, will be a healthy dish to serve!
¾ cup Martini Bianco
4 6 oz portions salmon filet, butterflied to ½ inch thick
½ loaf French baguette, ripped into small chunks
½ cup chiffonade fresh basil
1 stick butter, melted*
zest of 2 lemons, juice of 1 ½ lemons
Salt and pepper to taste*
Marinate salmon in Martini Bianco for 1 hour. Remove from liquid and pat dry. Preheat oven to 500 degrees. Pulse the bread in a food processor to produce small crumbs; it should yield about 2 ¼ cups. Combine the fresh breadcrumbs with the basil, butter, lemon zest and juice. Season the breadcrumb mixture with salt and pepper. Lay the salmon out onto a baking sheet and season with salt and pepper. Divide the breadcrumb mixture between the salmon portions and spread out to evenly coat them. Bake for about 5 minutes or until salmon is just cooked through and the breadcrumb topping is golden brown. Serve.
