Hot and Sour Shrimp Rice Noodle Soup

6 cups water
2 teaspoons Patak's Hot Curry Paste
1 tablespoon sugar*
4oz rice noodles
6 tablespoons fish sauce
3 tablespoons white vinegar*
3/4 cup fresh cilantro, chopped
2/3 pound shrimp, (u30-40) peeled and de-veined
In medium rondeau, combine first three ingredients and bring to a boil, over high heat. Add rice noodles and cook 1 minute, or until tender. Add remaining three ingredients to soup and taste. Adjust soup to your liking; add more curry paste if you like it hotter; add more vinegar if you like it more acidic. Stir in cilantro and divide among four bowls; serve hot.
