Ground Beef with Refried Beans, Salsa and Grilled Zucchini



Estimated Cost: $10.50


5 tablespoons corn oil*
3 zucchini, cut into strips 1/3 in thick lengthwise
salt and pepper to taste*
1 ½ pounds ground beef,80% lean
1 16oz can Old El Paso refried beans
1/2 cup water*
1 14 oz container Santa Barbara Hot Salsa, or other fresh salsa of choice
4 large tortilla shells

Heat a large sauté pan until very hot. Preheat grill. Toss zucchini with 3 tablespoons of corn oil and season well with salt and pepper. Grill for 5 minutes or until tender. Add oil to hot pan and then add beef. Season with salt and pepper and cook, stirring, until beef is almost cooked through. Thoroughly combine refried beans, water and salsa. Add to beef mixture and simmer until beef is cooked through. To plate, place zucchini strips in the bottom of the tortilla shell. Spoon beef mixture inside of the shell on top of the zucchini and serve.
