Recipe Name: Feta and Kalamata Panini

4 Portuguese rolls, split lengthwise
6 tablespoons extra virgin olive oil*
12oz feta, cut into thin slices
1 cup Victoria Roasted Red Pepper, cut into thin strips – or other canned roasted red peppers
1/2 cup chopped kalamata olives
2 small heads fennel, sliced thinly on mandolin, green tops reserved
1 1/2 tablespoons sherry vinegar*
Preheat a panini press. Lay out the four bottoms of the Portuguese rolls on a work surface. Cover with 1/2 of the cheese slices and then top the cheese with the red peppers and the chopped olives. Top with remaining cheese slices and then top the sandwiches with the top halves of the Portuguese rolls. Rub the outside of the sandwiches with 4 tablespoons of the olive oil. Place in panini press and cook for 5 minutes or until the bread is crisp and the cheese is melted. Meanwhile, toss the shaved fennel with the sherry vinegar and the remaining 2 tablespoons of olive oil. Chop the fennel greens and add to the salad. Season with salt and pepper. When sandwiches are ready, slice in half and serve with a pile of the fennel salad.
