Crusty Herb Prime Rib with Broccoli Florets.
Doesn't this sound great? Well a listener on Food Talk wanted to send their Prime Rib in Flavor orbit and my first thought was crusty. Sounds weird but trust me, it's delicious!
Original recipe given on Food Talk with Rocco on WOR Radio. Exact measurements and method was not given during the show so it is open to individual interpretation and method.
Prime Rib Steak
Whole rosemary
Whole thyme stalks,
Whole black pepper,
Big sea salt
Olive oil
Broccoli florets
Cream
Gruyere cheese or Swiss cheese
Lemon juice
Red pepper pimento vinaigrette: red wine vinegar, chopped up pimentos, some capers and pine nuts.
Take the whole rosemary and whole thyme stalks, mix it with whole black pepper, add lots of the big sea salt – mix that all together with some olive oil to make a thick paste and just lay it on top of the meat an inch thick.
It will infuse the meat with a fragrance, the salt will season it. Then cook your meat.
Next, take your florets, cut them small, and toss them in a bowl with cream and gruyere cheese or Swiss cheese, then put it in a casserole and just bake it. Add a little lemon juice in there just for balance. If you want a Mediterranean feel, then make a little red pepper pimento vinaigrette (red wine vinegar, chopped up pimentos, some capers and pine nuts) then put that on top before you serve it.
