Cranberry & Goat Cheese Salad

Bored of ordinary lettuce and regular greens? Salads can be a lot more. This is one of my favorites, a great combination of flavors and textures that balance perfectly. And it takes less than 5 minutes to make!


1/2 cup dried cranberries
3/4 cup balsamic vinegar*
3 cups radishes, cut into chunks
8 oz fresh goat cheese, crumbled
1/2 cup celery leaves
1/3 cup pine nuts, toasted
1 cup extra virgin olive oi*l
Salt and pepper*

Combine the cranberries and vinegar in a small bowl and let sit for three minutes.

In a large bowl, gently combine remaining ingredients with your hands, being careful not to completely smash the goat cheese. Pile in center of a plate and garnish with soaked cranberries and a drizzle of vinegar.
