Chicken Chopped Salad


Estimated Cost: $11.50


4 thin-cut chicken breast pieces
salt and pepper to taste*
1/2 cup flour*
2 eggs, beaten
1/2 cup vegetable oil*
6 cups iceberg lettuce, sliced
6 tablespoons india relish
2/3 cup Hellman's Dijonaisse

Heat oil in a large nonstick sauté pan. Meanwhile, season chicken with salt and pepper and dredge in flour. When the oil is hot, dip chicken into egg and directly into the pan. Cook until golden and flip. Continue to cook until other side is golden. Whole process should take about 3-4 minutes. Set aside and allow to cool slightly. Meanwhile, in a large bowl, toss lettuce with relish and Dijonaisse and season with salt and pepper to taste. Divide salad among four plates. Lay a chicken cutlet on top of each salad. Serve right away.
