Cheesy Roast Beef and Zucchini

1 pound thickly sliced Black Bear Roast Beef, or other roast beef of choice
2 tablespoons canola oil*
2 large zucchini, cut 1/3 in thick into half moons
(should equal about 4 cups)
salt and pepper to taste*
1 15 oz jar Tostito's Salsa con Queso

Arrange beef on a plate and microwave until very warm- about 2 minutes. Be careful not to additionally cook the beef, just to warm it. In a microwave-proof container, heat cheese sauce until very hot. Meanwhile heat a large sauté pan until quite hot. Add oil and zucchini. Season and sauté, stirring frequently, until tender, about 5 minutes. Divide zucchini among 4 plates and then pile it with roast beef. Spoon hot cheese sauce liberally over the zucchini and beef
