Cauliflower Au Gratin
Our buddy and good friend of my radio show Mikey from Brooklyn always calls with the most interesting questions, he really is a curious foodie! So he asked me if I could come up with a Cauliflower Au Gratin. So after he sang a few bars in Italian to Mama, I gave him this one.
Original recipe given on Food Talk with Rocco on WOR Radio. Exact measurements and method was not given during the show so it is open to individual interpretation and method.
Heavy cream,
One-third to two-thirds Gruyere cheese (grated) Cauliflower
Nutmeg
salt and pepper
Blanch the cauliflower in a pot of boiling water, drain it and put it in a casserole dish. Next, sprinkle the grated Gruyere cheese on top, pour some cream and sprinkle more cheese. Once it is all coated evenly toss it around and bake it. When it is done, add a little nutmeg, salt and pepper to taste.
