Caramelized Banana Panini

1/3 cup sugar*
4 slices challa
1 to 1 1/2 sticks butter*
3 ripe bananas, peeled and sliced in half widthwise
salt pinch*
1/4 cup lime juice, fresh
2 cups Haagen Daaz's Pineapple Coconut ice cream, or other coconut ice cream of your choice
Heat a large nonstick sauté pan over medium heat. Meanwhile pour sugar onto a plate and coat challa slices with sugar on both sides. Take each banana half and slice lengthwise into three even slices, giving you 18 slices. Arrange four banana slices across the top of each piece of bread and press slightly so that bananas stick to the bread. Season the bananas very sparsely with salt. Add 1 stick butter to hot pan, and when melted add all four "sandwiches" - banana side down. Cook until caramelized, flip each sandwich over and add remaining butter if pan is dry. Cook for about 2 more minutes once you flip them. Sprinkle 2 tablespoons of sugar into pan and add lime juice. Allow to simmer and form a sauce; use this sauce to baste the sandwiches. Remove from pan and place on individual plates. Top each dessert with a large scoop of coconut ice cream and serve right away.
