Bianco-Grilled Peaches with Cocoa Foam

Recipe Name:  Bianco-Grilled Peaches with Cocoa Foam

Number of Servings:  4


6 medium peaches, halved, pits removed
1 cup Martini Bianco
salt to taste*
1 cup skim milk
¼ cup chocolate syrup
3 tablespoons cocoa powder
1 tablespoon sugar*

Marinate peach halves in Martini Bianco for at least 1 hour. Make sure your grill is very clean and sprayed with oil. Preheat grill. Drain peaches and season very lightly with salt. Grill them for about 5 minutes on the cut side, so that they achieve grill marks and are tender and warm throughout. The riper the peaches, the less time they need on the grill. Remove from grill. Meanwhile, heat milk and chocolate syrup in a small saucepot. When simmering, whisk in cocoa powder, sugar and a large pinch of salt. Buzz this mixture with a hand-held immersion blender so that it becomes very frothy. Place 3 peach halves on each plate and using a large spoon, skim foam from top of cocoa mixture. Spoon enough foam over the peaches to cover them completely. You will need to refroth the foam after each skimming. Serve immediately.
