Beef Shabu-Shabu with Watercress

6 cups Swanson Chicken Broth, or other chicken broth of choice
1/4 cup dijon mustard
1 pound frozen filet mignon
salt and pepper to taste*
2 bunches watercress, cleaned
1 cup Fresh from the Start Scalloped Potatoes, or other cooked thinly cut potatoes of choice

In a medium saucepot, bring chicken broth to a boil and whisk in mustard. Add potatoes to broth and simmer until potatoes are hot and tender. Cut filet mignon thinly with a sharp Japanese mandoline. Season filet mignon with salt and pepper. In 4 bowls, arrange filet mignon slices in a single layer. Pour boiling stock and potatoes over filet and scatter watercress on top and into the soup. Serve very hot.
