Beef Curry Sauté

1 ½ cups water*
2 cups instant rice
1 tablespoon vegetable oil*
1 ¼ pounds store cooked roast beef, sliced thick
salt and freshly ground pepper to taste*
1 cup Ready Pac Tricolor Pepper Dice (red, yellow, and green)
2 tablespoons Patak's Hot Curry Paste(tomato and cumin)
1 14oz can coconut milk
In a medium saucepot, bring water (lightly salted) to a boil. Stir in rice, turn off heat and allow rice to absorb the liquid for 5 minutes. Meanwhile, heat oil in large sauté pan until hot. Add pepper dice and cook until aromatic, about 1 minute, stirring frequently. Add curry paste to pan and stir to mix in. Add coconut milk and bring mixture to a steady simmer. Continue to simmer until sauce begins to thicken. Mix roast beef into the sauce. Season with salt and pepper and remove from fire as soon as beef is warm. Fluff the rice and divide it among four plates. Spoon an equal amount of beef curry mixture over each bed of rice and serve.
