Avocado Salad with Red Onion and Feta
Estimated Cost: $15.18
4 lemons zest from all and 8 tablespoons of juice
6 tablespoons extra virgin olive oil*
salt and pepper to taste*
4 ripe avocados, sliced
1 large red onion, cut crosswise into very thin slices
(should be about 1 1/2 cups)
8 oz feta, crumbled
1/3 cup chopped cilantro
To make dressing, combine lemon juice, lemon zest and extra virgin olive oil in a bowl; season with salt and pepper and toss half of it with the red onions. On four plates, lay out a bed avocado slices and season with salt and pepper. Top avocados with red onions and scatter the feta on top. Drizzle the remaining dressing evenly over the salads and sprinkle cilantro on top. Serve.
