I had someone ask me if I had any great ideas for some appetizers at a function they had coming up. I love appetizers, they are easy fun and a great start to the party. Below you will find a few I think are key to any gathering!
Original recipe given on Food Talk with Rocco on WOR Radio. Exact measurements and method was not given during the show so it is open to individual interpretation and method.
(see below)
Finger sandwiches.
Smoked salmon with cucumbers
Lox and cucumber.
You take white bread, then a drop of mayonnaise, thinly sliced cucumbers, some grav-lox and then the other piece of bread, then you cut off the edges, the crust, and then cut them in triangles.
Currant Chicken Salad.
One of my favorites for this kind of thing is a currant chicken salad where you cook some chicken breast, then cut it up real small and you make a currant mayonnaise and some kind of nuts – walnuts, and then a mild sweet spice like nutmeg since she can't have anything too spicy. But don't forget the chopped tarragon, very important!
Watercress Sandwiches.
And then the watercress sandwiches are a great – that's white bread, watercress and smoked sturgeon and maybe a little lemon peel in the mayonnaise.
Sliced Radishes.
Take some radishes, slice them real thing but don't soak them in water because they'll curl up, and then butter and that's it. Radishes and butter are fantastic together; they really balance each other well.
Beverages.
Finally, get some sparkling wine or champagne…I like Martino & Rossi Prosecco, it's great quality and inexpensive. You serve that chilled.
