Rocco: Hey Mo'Nique, you are one of the funniest ladies on earth! What are some of your fav foods?
Mo'Nique: Thanks baby. Well I love Macaroni and Cheese, Collard Greens with Butter and Saurkraut with Turkey Butts!
Rocco: You made that up!
Mo'Nique: No I didn't, it's like the ham of the Turkey and is the best part!
Rocco: You are so funny. So what are you up to these days?
Mo'Nique: So much, I never sleep! I am hosting my new show called Mo'Nique's Fat Chance! It's the first beauty pagent for Full Figured Women.
Rocco: Sounds like so much fun. What do you think about plus sized fashion?
Mo'Nique: I think style, sexy and affordable. This show will show that off!

Annmarie from Connecticut: When I make your Shakarato Coffee, I need to know the measurements and how to make it!
Rocco: This is greatest coffee in the world!You need a shot of coffee or one little cup of Espresso, approximately 2 ounces. Three to Four cups of Ice and a shaker. The key here is not to dilute the drink so aggressively shake the contents in the shaker and it will be perfect!
E-mail from Rica: Can you talk about your favorite Mios Marinade for Salmon?
Rocco: Here goes Rica: 1/3 Miso (medium miso), 1/3 Orange marmalade and enough lemon juice to taste! If you seal this mixture in an air tight bag it will last forever! For the actually glaze for the fish, slather salt and the Miso Mixture on the Salmon. Put the Salmon in a toaster oven on high broil for 8 Minutes. It will crust and be absolutely delicious!
E-mail from Lee Youn Jin: I'm from Korea. Do you see fusion between Italian and Korean Food?
Rocco: Actually, a lot of people consider Korean Food as the Southern Italian Food of Asia because of it's use of tomatoes. I think there would be an interesting opportunity for fusion. I made this Cod with Nappa Cabbage Kimchi once when I worked at Union Pacific! I seasoned the cod with tomatoes garlic and salt. The use bread crumbs and make a breading with the sauce and breaded the cod.

Rocco: Of course! You can freeze and refridgerate the dough for a long time-the reason it lasts is because dough is made of fat, flour and water combination.
E-mail from Bonnie: Loved your show on Illy cafe! The best grinders for coffee are the Burr grinders. You agree?
Rocco: The Burr Grinder is great and is inexpensive. However, I find that leaving grinds in contact with the water leaves the coffee being more bitter.

Rocco: The same pan that works for a gas stove works for an electric stove! There is no reason to get a special pan for your stove-heat radiates the same way no matter what pan you use!

Rocco: Here is an interesting one that is different than you'll find at a deli: diced chicken, dice celery, grapes, sweet curry, vinegar, apples and Tarragon. It will rock your chicken salad!

Rocco: Try Uptown Prime-go to http://www.uptownprime.com/. I have used them many times and they have great steaks there!
